In a small-scale 2009 study involving eight healthy women, researchers observed that consuming 12.7 ounces (360 grams) of bamboo shoots for six days led to a significant decrease in both total and LDL (bad) cholesterol levels, compared to those following a control diet.  

The study investigated the effects of bamboo shoot consumption on the health of young women and found that it resulted in improved cholesterol levels, including lower total cholesterol and low-density lipoprotein cholesterol. However, there were no changes in blood sugar levels. Additionally, the women experienced increased bowel movements and fecal volume when consuming bamboo shoots. Overall, these findings suggest that bamboo shoots may positively impact cholesterol levels and bowel function in healthy young women. 3
